Since 992 -- not 1992 -- when gingerbread was introduced to Europe by Armenian monk Gregory of Nicopolis, the pastry was made more like a cookie, like what is used to make gingerbread men. In the United States, the first known recipe for "Soft gingerbread to be baked in pans" was noted in a 1796 cookbook by Amelia Simmons.
